GORGEUS CHOCOLATE PANCAKES


PREPARATION TIME: 40 MIN

COOKING TIME: 20 MIN

 CHOCOLATE PANCAKE

Ingredients

For the pancakes
  • 170 g self-raising flour
  • 1 tsp bicarbonate of soda
  •   60g sugar
  • 30 g chocolate powder
  • 1 egg
  • 50 g melted butter
  • 250 ml milk
  • cooking oil for frying

  • For the chocolate sauce

  • 150 ml water
  • 200 g dark chocolate powder
  • 30 ml  rum(Dark)
  • 25 g butter
  • 25 g sugar
  • chocolate chips and shavings for decoration
For the chestnut cream
  • 200 packed cooked chestnuts
  • 15 g icing sugar
  • 175 ml whipped cream
  • 1 vanilla pod

Method

 

1. For the pancakes, mix the flour, bicarbonate of soda, sugar and cocoa all together.
2. In another bowl, beat together the egg, milk and butter.
3. Mix then the wet and dry ingredients and beat until smooth.
4. Lightly oil a frying pan and place over a moderate heat. Spoon a ladleful of the batter into the pan - enough to cover the base in a thin layer.
5 .Cook for I minute on each side.
6. Repeat to make 8 pancakes
 7. Meanwhile, make the chestnut cream. Put the chestnuts and sugar into a blender and whiz until smooth.
8. Cut the vanilla pod in half and scrape out the seeds. Add to the chestnut mixture and stir well.
9. For the sauce, bring the water, sugar,rum and chocolate to the boil and simmer for 6 min.
10. Remove from the heat and whisk with  butter.
11. Serve the pancakes with the chestnut cream and chocolate sauce. 
12 . Decorate with chocolate sprinkles/shavings or choclate chips.

Never had chestnut cream before,it really compliments the pancakes,and the rum sauce lovely.
