Lemon Cheesecake

LEMON CHEESECAKE

 You will need:

200 g packet digestive biscuits
115 g butter
1 packet lemon jelly; 2 lemons
1 large tin evaporated milk
140 g sugar
225 g  cream cheese


METHOD:

  1. Cover base of a round( 7`` or 8``) cake in a tin with foil. 
  2. Crush biscuits in plastic bag.
  3. Melt butter in a pan and add crushed biscuits and mix well - press on base of tin and refrigerate. 
  4. Put in saucepan over heat 142 ml of water and jelly until dissolved - add zest and juice of lemons and put aside to cool.
  5. Whisk milk until thick, then add sugar, cheese and lemon mix thoroughly.
  6. Pour this mixture in cake tin and allow to set (4-5 hours) 
  7. Decorate with sliced fruit.
