LEMON CHEESECAKE
You will need:
200 g packet digestive biscuits
115 g butter
1 packet lemon jelly; 2 lemons
1 large tin evaporated milk
140 g sugar
225 g cream cheese
METHOD:
- Cover base of a round( 7`` or 8``) cake in a tin with foil.
- Crush biscuits in plastic bag.
- Melt butter in a pan and add crushed biscuits and mix well - press on base of tin and refrigerate.
- Put in saucepan over heat 142 ml of water and jelly until dissolved - add zest and juice of lemons and put aside to cool.
- Whisk milk until thick, then add sugar, cheese and lemon mix thoroughly.
- Pour this mixture in cake tin and allow to set (4-5 hours)
- Decorate with sliced fruit.
