Hey guys, this is a Chinese dish popular in Cantonese cuisine and for this recipe you will need:
2-4 chicken joints or 1/2 lb leg of pork
Sauce:
1 small onion; 30 g margarine
2 tbsp demerara (brown sugar)
2 tbsp tomato ketchup
2 tbsp malt vinegar; salt
1 small green pepper
1 small can pineapple
2 tbsp Worcester sauce
1 tbsp sweet Chutney
1 tbsp Cornflour
175 g long grain rice
Method:
- Brush dry chicken joints with melted butter.
- Place under high grill to `seal` the chicken.
- Turn down grill and cook slowly, turning occasionally for about 25-30 min.
- Chop onion and green pepper.
- Melt margarine in a saucepan, fry onion and pepper for about 3 minutes.
- Strain pineapple syrup and make up to 1/2 pint with water.
- Chop fruit roughly and add both to saucepan.
- Stir in sugar, worcester sauce, ketchup and chutney.
- Blend together vinegar and cornflour, add to pan with salt to taste.
- Bring to boil and simmer 10-15 min.
- Serve chicken or pork on a bed of rice and pour sauce over the top.
